Strawberry Bruschetta

Strawberry BruschettaThis is a great entertaining dish that is easy and impressive. The combination of goat cheese and zesty balsamic vinegar is perfect with the sweetness of the strawberry.

Try it while strawberries are still around!


1 cup of strawberries, hulled and diced
1 Tbsp sugar
1 French baguette, sliced on the bias
4 oz goat cheese
1 Tbsp olive oil
2 tsp balsamic vinegar
1/4 cup minced basil leaves
Freshly ground black pepper


Combine the strawberries with sugar in a small bowl and toss to combine. Let the berries macerate for 30 minutes so the juices begin to release.

Spread a thin layer of goat cheese on top of each baguette slice.

Top each slice with a spoonful of strawberries.

Lightly drizzle with olive oil and balsamic vinegar and top with basil leaves and cracked pepper to taste.
