Today started a lot earlier than I expected. Let’s just say there was a 4 on the clock when I got up. After that it’s been non-stop productivity, and you would think I would go to bed early tonight. Nah. Instead let’s bake some banana bread. This recipe is so quick and easy to prepare. It was worth staying up!
Ingredients:
- 1 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/4 cup canola oil
- 1/4 cup smooth peanut butter
- 1 egg
- 2-3 ripe bananas, mashed
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Directions:
Preheat the oven 325 degrees. Prepare with non-stick cooking spray, 1 9″ bread loaf pan and put to the side.
Add the following dry ingredients in a large bowl (flour, baking powder, baking soda, salt, cinnamon, sugar and brown sugar). Whisk together to incorporate.
Create a well in the middle of the dry ingredients then add the wet ingredients (oil, peanut butter, egg, bananas and vanilla extract). Stir to combine the dry and wet ingredients.
Gently stir in chocolate chips. Add mix to prepared bread loaf pan.
Bake for 55-60 minutes.
Remove from oven and turn out onto wire rack to cool for at least 5 minutes.
Slice and Enjoy!
