Crock Pot Beef with Mushroom Sauce

As the weather turns colder here in Virginia, I’m always looking for warm and hearty recipes.

I found this recipe and was surprised it called for 7-up. I would consider cooking this on high heat for 2-3 hours instead of low for a while. Even though it turned out well, I think less time at a higher temperature may make it more tender… Just a thought!

Ingredients:

1 1/2 pounds lean stew meat
1 can cream of mushroom soup
1 pkg. onion soup mix
1 cup baby carrots
12oz  Diet 7up
1 Tbsp Cornstarch

Recipe:

Combine the first five ingredients in a large crockpot. (Reserve the cornstarch for the end.) Using a large spoon, toss the meat to combine with the mushroom soup and onion soup mix.

Cook for 4 hours on high or 6-8 hours on low. About 30 minutes before serving, add 1 Tbsp of cornstarch to thicken.

Serve over rice or risotto.
