Buffalo Bites, light but full flavor!

I’m a sucker for anything buffalo. Not to spicy Mexican food, buffalo flavor is at the top.  This little meatball recipe is great! It’s quick and easy.

Another option for these bites would be a buffalo wrap, with a tortilla, lettuce, tomato, etc. Just a thought! For this go round, I ate them with ranch dressing and celery – kind of how you’re supposed to eat wings!

Ingredients:

  • 1lb ground chicken or turkey
  • 2 oz cream cheese, softened
  • 2 eggs
  • 2 Tbl chopped celery
  • 3 Tbl crumbled blue cheese
  • Plain breadcrumbs
  • Your favorite wing sauce

Recipe:

Preheat the oven to 350.

Combine the first five ingredients in a mixing bowl. This mixture will be wet, add bread crumbs to give some consistency to the meatballs. About 1/4 to 1/2 cup off breadcrumbs.

Prepare a cookie sheet with foil and spray with non-stick cooking spray. Either roll spoonfuls into balls or dish the rounded spoonfuls directly onto the greased sheet.

Bake for 10 minutes.

Remove from oven and gently toss each buffalo bite in your choice of wing sauce. Return to the cookie sheet. Then bake for another 12 minutes.

Serve with side of ranch or bleu cheese with carrots and celery sticks!
