I did it, I made shrimp and grits! The thing I like most about this recipe is that there is no cream. Most recipes include at least half and half – which increases the fat content significantly. This recipe is still flavor packed!
Ingredients:
3 cups chicken broth
1 cup old fashioned grits
1/2 cup shredded cheese
1/2 cup parmesan cheese
1 tsp olive oil
6 slices then deli ham
1 1/2 lbs large shrimp, peeled and deveined
1 lemon, juice only
3 tsp Worcestershire sauce
2 tsp minced garlic
1 Tbsp chopped parsley
Salt and Pepper
Recipe
In a medium sauce pan bring the chicken broth to a boil over medium-high heat. Stir in the grits, cover and reduce heat to simmer. Simmer for 12 minutes, stirring occasionally. Remove from heat, stir in the cheddar and parmesan cheeses until melted. Cover and set aside.
In a large skillet, heat the olive oil over medium-high heat and add the ham. Cook the ham until it is crispy which should take a few minutes. Remove and drain excess grease on a paper towel on a plate.
Using the same skillet, cook the shrimp for about 3 minutes. While cooking season with light salt and pepper. Cook shrimp until no longer pink.
Add lemon juice, Worcestershire sauce, and garlic. Heat through to a low simmer and remove from heat. Stir in the ham.
Spoon grits onto serving dish and top with shrimp mixture, including the sauce. Sprinkle a little parsley over the top to finish the dish.
