When my husband travels for work, I eat the exact same thing. Eggs. Some variation of eggs. I don’t know why but I do and I *love* it!
This random concoction is one of my new favorites, I call it the Mexican Scramble:
Ingredients:
- 2 Eggs, beaten
- 2 Tbsp black beans, drained and rinsed
- 1 Roma tomato chopped
- 1/2 Avocado, cubed
- Sprinkle cheddar cheese
- Chopped cilantro
Cook the eggs in a small pan over medium heat. As the eggs come together, add the black beans to heat them through. Once the eggs are cooked, stir in cheddar cheese until starting to melt. Remove the eggs to a plate and top with tomato, avocado, and cilantro.
Serve with warmed flour tortillas or toast.
