I was made for this recipe, seriously. If you look at the Pantry/Freezer list of my website you’ll see that I have this dish on hand pretty much always. That’s actually how I stumbled across this recipe. I tend to peruse, at least once I’m bored of Pinterest or looking to add some pinned content, several websites CHOCK FULL of awesome recipes. Kraft, Pillsbury, Pork Be Inspired, Taste of Home, etc. to name a few.
I’m looking through my freezer one night and thinking, I’ve got ground beef, frozen vegetables and maybe some type of breading concoction. Boom, I find this little gem over at Pillsbury.com. It’s been on the winner list since that day…
- 1 lb lean ground beef
3/4 cup chopped onion
1 can (11 oz) condensed Cheddar cheese soup
1 cup frozen mixed vegetables
1/4 cup milk
2 cups baking mix (like Bisquick)
3/4 cup water
1 cup shredded Cheddar cheese (4 oz) - Heat oven to 400°F. Generously spray 13×9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, cook beef and onion over medium heat, stirring occasionally, until beef is browned; drain. Stir in soup, vegetables and milk.
- In baking dish, stir baking mix and water until moistened; spread evenly. Spread beef mixture over batter. Sprinkle with cheese.
- Bake 30 minutes.
