Jamaican Rubbed Pork Chops

Despite my couponing adventure to HT, I did come home with four pork chops. Truthfully, I’ve never really liked pork chops. At least I didn’t think so. I’m beginning to experience pork anew through tasty rub recipes like the Sweet and Spicy tenderloin recipe. Here’s another one for your cookbook:


  • 2 Pork Chops
  • 2 Tbsp brown sugar
  • 1 clove garlic, minced
  • 1 tsp coarsely ground black pepper
  • 1/2 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

Pat pork chops dry with paper towel. Stir together remaining ingredients in small bowl and rub chops on both sides with seasoning mixture.

Grill chops over medium-hot grill, turning once, about 10-12 minutes, until internal temperature on a thermometer reads 160 degrees.

Seriously, with only 200 calories, 27 grams of protein, and 6 grams of fat,  I’m really starting to love the “other white meat.”

  1. Brooke, I am going to try your seasonings for your delicious looking pork chops. Thank you for sharing the secret of nutmeg and cloves! I love the “other white meat”– pork can be less fatty than white chicken.
