Fiesta Time – Layered Mexican Pie!

You know I’m happy because tonight we’re having Mexican! This is an adaption from the actual boxed meal from Old El Paso, but I’m partial to this version instead. 🙂 You can use ground beef or ground turkey depending on what you have, or prefer. I usually save ground beef for burger nights.

Give this tasty, quick meal a try – it’s a family favorite!

Ingredients:

  • 1/2 lb Ground Turkey (for two)
  • Four flour tortillas
  • Cheesy taco seasoning
  • Fat-free refried beans
  • Spanish rice (optional) {I tend to go without because I just prefer less carbs but whatever you want!}
  • Shredded cheddar cheese
  • Chopped tomatoes
  • Shredded lettuce
  • Salsa (optional)
  • Sour cream (optional)
  • Jalapenos (optional)

Preheat the oven to 350.

Brown the turkey meat on the stove in a pan on med-high heat. {Turkey meat is a little slimey but it will ground up like beef, just let it cook}.

Prep an 8” x 8” casserole dish with Pam. Take one tortilla shells and spread refried beans on the shell – place the shell in the bottom of the casserole dish. Next layer the rice (if using), then turkey meat, sprinkle with cheese – and repeat. Usually about three bottoms and one top. Sprinkle cheese on top and bake for 20 minutes.

Slice into pie pieces, top with chopped tomatoes, shredded lettuce and salsa. You can add other toppings like sour cream and jalapenos if you’d like!
