Lemon-Soy Orange Roughy with Wild Rice

Tonight’s dinner is for YOU but not us! We’re heading out of town, but I encourage you to enjoy this wonderful dish. Orange Roughy is one ugly fish in pictures, don’t even look. But for eating its a firm, meaty, white fish which is low in calories.

You’ll need:

  • One large fillet of orange roughy cut into two (for two servings)
  • 1 garlic clove
  • 1/8 c. lemon juice
  • 1/2 Tbsp soy sauce
  • 1/2 tsp sugar
  • 1/4 tsp salt
  • 1/8 c. olive oil

Preheat in the oven to 450.

Lightly mist a baking dish with non-stick cooking spray (depending on the size of your fillets, choose your dish). Combine the garlic to salt (first five ingredients) then whisk in the olive oil.

Pour over the fish and bake. Orange Roughy will take about 7-9 minutes.

You can subsitute Flounder if you prefer, but the cooking time decreases to 5-7 minutes. I like to serve this with quick cooking wild rice. Get that started before the fish, it usually takes about 10 minutes. Other times, I’ll add a small salad or something green instead of the starch.
