Chicken Alfredo Pizza

For #dinnertonight we’re having a mashup between two great dishes. Chicken alfredo and pizza! Really how can you go wrong? If you’ve visited the “In my Fridge” page you’ve seen I like to keep a pizza dough in a can in there. I mean some days you come home, it’s been raining actually or metaphorically and you just want something quick and easy – pizza.

Well this isn’t exactly the simple pizza recipe but it’s definitely a good change up.

Shopping list:

  • Can of Pizza Dough {I usually get the Pillsbury regular crust or  thin crust depending on my mood. PS. These usually last about 45 days from purchase so if they are on sale, stock a few!}
  • 1/2 cup of Alfredo sauce
  • 1 1/2 cups frozen or fresh broccoli florets
  • 2 breasts of chicken (frozen or fresh)
  • Parmesan cheese
  • 2/3 mozzarella cheese
  • Mrs. Dash Table seasoning
  • Salt

Get your oven preheating to whatever the pizza dough requires, either 400 or 425.

I had to defrost my chicken, so I got that going on auto-defrost in the mircowave. Once thawed, slice the chicken and add to a medium sauce pan. Season with Mrs. Dash and add a little salt. {Mrs. Dash is usually salt-free which is cool and all but sometimes I like to add that salt back in – sorry Mrs. D.}

Meanwhile is a small pot get your broccoli started on med to med-high heat. Add a little water, season with a shake or two of salt and pepper. Put a lid on that and leave it alone for a little while.

As your chicken is finishing up,  get a cutting board and knife ready. Put the chicken on your board and chop the chicken into small cubes. On a baking dish, grease with PAM, and open your can of pizza dough. You’ll have to unroll the dough and press it out to each corner of your baking sheet. Once you’ve got that evenly spread, add your alfredo sauce and spread with the back of a spoon.

Spread your chopped chicken over the pizza. Rinse your cutting board and flip over (or get another one out) for the broccoli. Remove the florets onto your cutting board and run your knive through the broccoli. You don’t want to desimate it but just enough so it will spread around. Add that to your pizza. Sprinkle about 2 tablespoons of Parmesan cheese over the chicken and broccoli. Next sprinkle your mozzarella cheese. (If you like you can add some crushed red pepper, too!)

Bake for 13-17 minutes, until the edges of the pizza are lightly golden brown.
