Heck Yea – Tacos with a Twist!

For #dinner tonight, we’re headed South of the Border. And not to that place between North and South Carolina – because that’s just scary. It’s Taco night and I’m excited. I love spicy Mexican food with a passion – by far I could eat it 8 days a week. {The husband feels that way toward Italian food.}

Anyhoo, this recipe is so easy and very yummy – and at least one step above the usual taco night.

What you’ll need:

  • 1/2 lb Ground Beef/Turkey (for two people…use whole pound for more)
  • Taco seasoning package
  • 8” Flour Tortilla -Fajitia sized
  • 2 cups tri-colored cabbage shredded or regular shredded
  • Tbsp chopped Cilantro
  • 1 lime
  • 1 Tbsp canola oil
  • 1/4 tsp cumin
  • Salt/Pepper
  • Salsa and/or chopped tomato
  • Lite Sour Cream
  • Lite Shredded Cheddar Cheese

How you do it:

Start your ground meat in a saute pan over med-high heat, brown and cook until no longer pink. Add 1/2 cup of water to your meat and the taco seasoning, bring to a simmer and reduce heat…simmer until most of the liquid is gone (5 minutes).

The secret of these delightful tacos is the following cabbage-cilantro coleslaw. Take 2 cups of shredded cabbage and put in a mixing bowl. Add two tablespoons of chopped cilantro. {I love cilantro so I never worry too much about the chop and if there are larger pieces. Just be sure to remove the leaves from the stems by sliding backwards against the way it’s growing. The stems won’t hurt you, they’re just a little crunchy.} Add 1/2 tablespoon of canola oil, 1/4 teaspoon of cumin, dash of sea salt and a few light shakes of pepper. Squeeze in the juice from one lime and mix all together.

If you’re having tomato, go ahead and get that chopped.

Warm your tortilla shells in the microwave for 10 seconds, then flip and another 10 seconds. Serve immediately. 2 tortillas per person. I suggest you layer as follows from bottom to top:

Taco Meat
Cabbage-Cilantro Coleslaw
Lite Sour Cream

Typically, mine are smaller than my husband’s…meaning I put a little less of each item on my tortilla. Portion control – I remind myself. Dig in!!

PS: You can substitute fish or shrimp, but we will make those another night!
